Formerly the Marina Bay Boutique, the new concept will create a shopping, dining and entertainment experience.

A new restaurant and retail boutique establishment is opening on Merritt Island soon, co-owner Benjamin Mireles told FFBW. Marina Bay Riverside Restaurant is expanding upon the concept initially launched in Cocoa Village called Marina Bay.

Owned by Madelynn Kennedy, the boutique offered finger foods, flatbreads, beverages, clothing and jewelry. Since closing on December 20th, the concept has been moving into its new digs at: 1870 E Merritt Island Cswy, Merritt Island, FL 32952.

In the new space, Marina Bay Riverside Restaurant will offer a full menu, space for activities like corn hole, horse shoes, live entertainment, art classes and a bar. Mireles said that the kitchen will be fryer-free, as they will prepare their food with air fryers.

The exact menu isn't available right now, but we can expect items such as wraps, burgers, wings, flatbreads and other similar dishes. Mireles reported that he and Kennedy will likely open Marina Bay Riverside Restaurant in late January or early February.

Mireles, who has opened several other restaurant concepts, plans to open more Marina Bay Riverside locations over the coming years. His current goal is five locations over the next five years.
