Hillsborough County’s restaurant scene is staying busy, with several new concepts already serving customers and more openings lined up through the end of 2026 and into 2027.

From Jamaican patties and smash burgers to Spanish tapas, barbecue and an ambitious coastal Mexican steakhouse, the pipeline covers a wide range of cuisines and formats. Here’s a look at what’s newly open and what’s still coming soon around Tampa, Brandon and Riverview.

Byte Burgers — Tampa

Status: The Westshore food truck is open now, while the permanent restaurant is still coming soon.

What to expect: Byte Burgers serves smash burgers, truffle burgers, fries, chicken items and Lebanese-inspired options such as falafel smash burgers.

Juici Patties — Tampa

Status: Planning a grand opening scheduled for September 19.

What to expect: Juici Patties focuses on Jamaican-style patties with fillings such as classic beef, jerk beef, curry chicken and meat-free options. The menu also includes coco bread, plantain chips, desserts and Jamaican beverages.

Ceviche — Tampa

Status: Coming soon, with a mid-September opening target.

What to expect: Ceviche will serve Spanish tapas, several ceviches, paella, grilled octopus, oxtail and jamón ibérico. The full-service restaurant will also feature a substantial wine program.

Outside BBQ — Brandon

Status: Coming soon, with an opening targeted around October 1.

What to expect: The takeout-focused barbecue restaurant will serve brisket, pulled pork, chopped chicken, ribs, loaded fries, combo platters and sides such as mac and cheese, baked beans and coleslaw.

Status: Coming soon, targeting November 1.

What to expect: King Corona 1902 will be a large cigar lounge and cafe with public and members-only areas, full-service bars, a coffee program, live entertainment space and hundreds of cigar lockers.

Totum Market & Eatery — Tampa

Status: Coming soon, with an exact opening date still to be announced.

Status: Brick-and-mortar restaurant coming soon. The existing mobile barbecue operation remains active.

What to expect: Matilde will be a large coastal Mexican steakhouse built around live-fire cooking. Expect steaks, seafood, poultry, charred vegetables, tortillas, indoor and outdoor seating and weekend live music.

Charley’s Steak House — Tampa

Status: The existing Tampa restaurant remains open, while the replacement location is coming in the first quarter of 2027.

What to expect: The new Charley’s will be a larger version of the longtime steakhouse, with about 400 seats, an expanded bar, private dining and the brand’s wood-fired steaks and seafood.
