Kook’s Conch Fritters Bringing Caribbean Flavors to South Florida
The pop-up concept will feature conch fritters, conch salad, and family recipes rooted in St. Kitts and Nevis.
POMPANO BEACH, FL — Kook's Conch Fritters, a female veteran-owned pop-up serving South Florida, is targeting a June 10, 2026 launch and will make its first event appearance at Juneteenth South Broward on June 20 at Washington Park in Hollywood, owner Cassius told Business Debut. The business will serve Broward, Miami-Dade and Palm Beach counties, starting primarily in Broward County.
What to Expect
Kook's Conch Fritters will focus on conch fritter bites, conch salad and conch fritter batter that customers can purchase to fry at home, Cassius told Business Debut.
Conch is commonly served across the Caribbean, including in the Bahamas, Turks and Caicos, Belize and other islands, Cassius told Business Debut. She described the texture as similar to calamari.
The business is currently taking orders through social media, phone and email while Cassius continues through the licensing process, she told Business Debut.

Menu and Vision
The concept is built around a family recipe from Cassius’ grandfather, Kirk Nisbett, who is from St. Kitts and Nevis. Cassius said Nisbett first invited her over for conch fritters during Memorial Day weekend in 2021, and her mother encouraged her not to miss the opportunity.
After tasting them, Cassius asked why he was not selling them. She later returned for a hands-on lesson with him on July 3, 2021, and began working toward building the business around the recipe.
“I specialize in making the fritters,” Cassius told Business Debut. “I took it and made it my own.”
The menu currently includes 10 conch fritter bites for $20 and conch salad cups for $10, Cassius told Business Debut. She said conch salad has become one of the most requested items.
Building the Business
Cassius said she used business seminars and AI tools, including ChatGPT, to help move the idea forward after initially being unsure where to start.
“That was one of the things holding me back, was where do I start with my business plan,” Cassius told Business Debut.
She said her younger brother first encouraged her to try ChatGPT, and a later business seminar helped her see how AI could be used to build a business plan. Cassius said the tools helped her organize her ideas, pursue her food protection manager certification and continue through the steps of launching the business.
“I was actually reluctant to it at first,” Cassius told Business Debut. “Every time I feel like I’m losing some type of momentum, I’ll just go to chat.”
Cassius said the technology helped her organize the business side, but the motivation started with her grandfather. She expressed that learning the recipe from him became part of both the business and her connection to her family history.
Opening Timeline
Kook's Conch Fritters is targeting a June 10, 2026 launch, with its first scheduled event set for Juneteenth South Broward on June 20. Cassius told Business Debut the event is celebrating its 10th anniversary this year.
Additional pop-ups will be announced as they are scheduled. Cassius said she plans to expand into more mobile pop-ups once licensing is complete.
