JACKSONVILLE, FL — Fatboy Friedrice, the Jacksonville-based fried rice concept led by co-owners Joshua Valencia and Jun Marc Quinones, is preparing its first brick-and-mortar restaurant at 9745 Old St. Augustine Rd, Jacksonville, FL 32257.

The restaurant will function as a home base for the brand’s growing fleet of food trucks across Jacksonville. Quinones said the team wanted a place where regulars could sit down and eat after years of following the trucks.

What to Expect

Valencia and Quinones started Fatboy Friedrice by selling plated meals through Instagram around 2020, then used those sales to buy their first used food truck, Quinones shared with Business Debut. They now operate under the Fatboy Friedrice Food Group banner and invest in other restaurant concepts as part of that group, Quinones said.

The restaurant menu will build on the fried rice-focused offerings from the trucks. The existing menu features fried rice bowls with proteins such as chicken, shrimp, steak, and lobster, along with fries, wings, and more.

Quinones said the larger kitchen will allow the team to add appetizers, additional entrees, and specialty drinks. Planned beverages include boba drinks and flavored lemonades, items that were limited by storage and refrigeration on the trucks, Quinones told Business Debut.

The new Fatboy Friedrice restaurant will seat about 60 to 70 guests, Quinones told Business Debut. He described the format as fast casual, with a mix of self-service kiosks and cashiers taking orders at the counter.

Quinones said the brick-and-mortar space will also act as a headquarters for operations. He shared that the owners have four trucks positioned on different sides of Jacksonville that now operate in fixed locations.

Opening Timeline

Renovations at the Old St. Augustine Road location are about 90 percent complete, Quinones told Business Debut. He said the team is focused on staff training and final preparations.

An exact opening date is to be announced.
