Coming Soon Jacksonville: Gastro Subs

JACKSONVILLE, FL — Gastro Subs plans to open its second location in about a month at 9475 Philips Hwy Unit 1, Jacksonville, FL 32256, co-owner Troy Busscher told Business Debut in a phone interview.

Busscher and co-owner Jason Malih opened the first Gastro Subs two years ago in Ponte Vedra. Busscher said the concept centers on gastronomy and a focus on ingredient quality.

“Our whole mantra is pretty much been based on gastronomy, eating, cooking and preparing really high quality and good food,” Busscher told Business Debut.

What to Expect

The Philips Highway restaurant will be a larger footprint than the original Ponte Vedra shop. Busscher shared with Business Debut that the team aims to use the added space to host more guests and support expanded operations.

Gastro Subs focuses on sandwiches built with higher-end ingredients and service-oriented hospitality. “We really wanted to bring the highest quality to the city,” Busscher told Business Debut.

The menu features subs named "The Jacksonville," "The A1A," "Luna's Tuna," and several more specialty subs. Gastro Subs also makes classics subs like Italians and more.

Beyond cold subs they sell hot and pressed subs, clubs and vegetarian options. Busscher said that guests at the original location have called the store after taking subs to go to share about how delicious the food is.

The larger Jacksonville shop will also serve as a testing ground for more rotating specials. Busscher told Business Debut he expects the Philips Highway location, given its central position, to support a more consistent specials program.

He said that format will allow the team to bring back popular limited-time items on request.

Opening Timeline

Busscher told Business Debut the Philips Highway location is targeting an opening in about one month from the mid-July interview. An exact opening date is to be announced.
