Casa Vialetto Reopening in Coral Gables

A beloved Italian restaurant is returning under a new name in Coral Gables.

CORAL GABLES, FL — Casa Vialetto is preparing to reopen at 276 Alhambra Circle, Coral Gables, FL 33134, bringing back a restaurant that owner Marcelo Chopa said many locals already know well. Chopa told Business Debut the restaurant is the continuation of Café Vialetto, the Italian fine dining restaurant he originally opened in 1999.

Chopa said Café Vialetto operated for 26 and a half years before he and his former business partner sold the property, and after that deal, his partner retired from the restaurant business. Chopa decided to move forward on his own, leading to the new name, Casa Vialetto.

What to Expect

Casa Vialetto is planned as a fine dining restaurant with a full bar, Chopa told Business Debut. The new space will be smaller than the original, with about 45 to 50 seats, but the intent is to keep the same polished dining experience that built a loyal following over more than two decades.

Chopa said the response from past guests has already been strong. He told Business Debut that longtime customers from Café Vialetto have continued calling and asking when the restaurant will return.

The restaurant will reopen with the foundation of the original Café Vialetto menu, with new items expected to be added over time, Chopa told Business Debut. The focus remains Italian cuisine with an emphasis on local products, seafood, pastas, and especially risotto, which he described as a signature strength of the kitchen.

Among the dishes he highlighted were a hog snapper served pan-seared in a mango mojito sauce with arugula and shrimp risotto, and braised beef short ribs with rosemary demi-glace and champagne risotto. Chopa told Business Debut those dishes reflect the restaurant’s long-running identity: refined, seafood-driven, and built around carefully prepared risottos.
