Alimento Opening Second Location
The current location is in a Jeep dealership on N Dale Mabry.
TAMPA, FL – Alimento, a fast-casual Latin fusion restaurant and meal prep concept from Jackson and his mother, Dayami Hernandez, is preparing to open a new location at 808 S Dale Mabry Hwy, Tampa, FL 33609 on December 1, Jackson Hernandez told Business Debut in a phone interview.
Menu and Vision
Alimento centers on recipes from Hernandez’s mother, which the pair adapted with a focus on healthy but utilizing portion control, avocado instead of seed oils and reduced salt.
He described the food as Latin fusion that reflects both Hispanic and American influences in Tampa.
Dishes include items such as black rice and beans, yuca and chickpeas prepared with methods that avoid heavy grease and pork, Hernandez shared.
The South Tampa space will operate as a full restaurant with a fast-casual format and an active meal prep program in the background. They will offer lunch and dinner service.
Customers will also be able to build customized meal prep orders on site.
Ownership Background
Alimento began about two years ago in the apartment Hernandez shared with his mother, where they cooked and sold meal preps. As orders grew, both left their jobs to focus on the business, and Hernandez learned to cook under his mother’s instruction.
“We cooked so much in that apartment that we broke the AC and we slept in 95 degree weather,” Hernandez told Business Debut.
They moved from the apartment into a ghost kitchen, then about a year ago into a Jeep dealership space that offered the first in-person service with a build-your-own bowl line, Hernandez shared.
“That took off and we got really good feedback from that,” he told Business Debut.
Hernandez said he views Alimento as a business he built for his mother and credits her as essential to the company’s existence.
Opening Timeline
He said they are planning to open the new restaurant on December 1.
Hours
Alimento plans to open every day.
Hernandez said current plans are for lunch and dinner service, likely opening around 10 or 11 a.m. and closing around 9 or 9:30 p.m.
He shared that Sunday hours will end earlier than other days.
