A corporate restructuring led this entrepreneur to open his own business.
ORLANDO, FL – Gabriele Uberti plans to open Daje Pinsa at 7823 Orange Ave, Orlando, FL 32809, featuring Roman-style pinsa made with imported Italian dough and a long fermentation process, Uberti told Business Debut.
Uberti has dreamt of opening his own restaurant. A corporate restructuring in October pushed him to pursue the longtime goal, he shared with Business Debut.
The name “Daje” is Roman slang that roughly expresses “let’s go” or “let’s make it happen,” Uberti said. It is pronounced "DAH-yeh."
What to Expect
Uberti's pinsa making journey began when he was 13 in Bergamo, Italy. He began making pinsas so he could buy himself a scooter. This spiraled into a love of pinsa that is culminating in Daje Pinsa.
He chose pinsa because it uses a blend of three flours, sourdough, and extra-virgin olive oil to create a light dough with long fermentation, typically about 72 hours. The dough has high hydration, around 85 percent, and requires very high baking temperatures.
Uberti spent seven to eight months sourcing authentic Roman pinsa bases from Italy before testing nearly 70 Roman pinsas to perfect the baking process and ensure each one delivers the light, airy, and crisp texture that defines traditional Roman pinsa.
Uberti plans to feature Italian products, including prosciutto and other imported items, and to serve wine and beer, with some elements poured at the table.
He shared five different pinsas you can expect to find on the Daje Pinsa menu:
- Bella Roma: buffalo mozzarella, prosciutto, mushrooms, parmesan, white truffle oil
- Daje: mozzarella, ricotta, black olives, ham
- Mediterranea: tomato sauce, mozzarella, cherry tomatoes, zucchini, black olives
- Gamberetti: shrimp, mozzarella, zucchini, cocktail sauce
- Macellaio: tomato sauce, mozzarella, pepperoni, pancetta, ham

Daje Pinsa is planned as a fast-casual restaurant with a modern ordering flow and Roman-inspired design.
Guests will enter to find self-service kiosks on the right side for placing orders, Uberti told Business Debut. After ordering, guests will take a seat, and staff will deliver food and drinks to the table.
Uberti said the dining room will feature a custom Roman arch and murals representing the Colosseum. He wants guests to sense a Roman setting through decor, layout, and educational displays about pinsa.
Opening Timeline
Uberti signed the lease about three weeks before speaking with Business Debut. The space is a vanilla shell that requires a full build-out including plumbing and electrical work.
A general contractor estimated completion by fall 2026, Uberti shared. A specific opening month and date remain to be announced.
