Aji Ceviche Bringing Peruvian Cuisine to Sarasota
From food truck to restaurant chain, Aji Ceviche is now opening fourth location
Aji Ceviche, the Peruvian-inspired restaurant chain that began as a food truck in 2015, is set to open its newest location in Sarasota this August, co-owner Ali Garcia Aleman told Business Debut in an interview.
The new restaurant will be located at 4141 S Tamiami Trail suite 16, Sarasota, FL 34231, taking over the space that hosted Darwin Evolutionary Cuisine. This 3,400-square-foot space will offer a bar and full-service dining with 150 seats.
Aji Ceviche, founded by Chef Freddy Zubieta, has grown from its food truck origins to include two locations in Orlando and one in Tampa. Chef Zubieta, along with Chef Andersson Erazo Martinez, will oversee the kitchen at the Sarasota location.
The restaurant plans to operate seven days a week, from 12 - 9 pm on weekdays and until 10 pm on weekends. Diners can expect a blend of modern and traditional Peruvian cuisine, including seafood and steak dishes, complemented by the full bar.
