RUSKIN, FL — Coastal Cowboy Social, a new restaurant and bar blending Western steakhouse dining with Florida seafood, is targeting a January opening at 102 W Shell Point Rd, Ruskin, FL 33570, owner Douglas Starz told Business Debut.

Starz said the concept pairs wild game and steaks with seafood in a setting that separates a Florida-style dining room from a Western-themed bar and an outdoor pavilion.

Starz said the menu will highlight wild game, seafood, and steaks, along with several barbecue items. “We want to bring a little bit of Montana or the West down to Florida and combine it with the Florida seafood as well,” Starz told Business Debut.

He said the team plans to feature elk and bison, and is evaluating vendors for venison. For the opening, Starz plans to source a bison from a friend’s ranch, have it USDA inspected, and transport the meat to Florida.

Starz described the restaurant as steak focused, with at least three or four steak cuts on the menu, along with seafood. Live bands and other entertainment are planned on weekends in the pavilion, with cocktail-focused seating and outdoor service.

Ownership Background

Starz grew up cooking in Pennsylvania within a short drive of the Maryland line and the Chesapeake Bay, he told Business Debut. That experience built his familiarity with seafood.

He later owned The Dugout, an on-mountain barbecue restaurant at 9,000 feet in Big Sky, Montana. That operation shaped his approach to wild game, steaks, and barbecue.

Starz has lived in the Ruskin area for about six years and said he enjoys the quiet setting and nearby dining options. “I love the area,” Starz told Business Debut, adding that surrounding communities such as Palmetto, Sun City, Bradenton, Riverview, and Brandon place a large customer base within a 20-minute drive.

Opening Timeline

Coastal Cowboy Social is undergoing extensive interior renovations that include barnwood from Montana and mounted trophy animals in the bar. He said the team is targeting a January opening, with the exact date to be announced.

The upstairs of the 1925 building is currently a two-bedroom apartment, which Starz plans to convert into a private, membership-based speakeasy. Work on that phase is expected sometime next year, with details to be announced.

Hours

Starz said Coastal Cowboy Social will serve lunch and dinner.
