PSL's Newest Restaurant Coming Soon: Dare Goes Da Pasta

PORT ST. LUCIE, FL — Dare Goes Da Pasta, a new fast-casual pasta and coffee concept from owner Domenick Gonzalez, is planned for 723 SW Port St Lucie Blvd Port St. Lucie, FL 34953. Gonzalez shared his plans for the 1,200-square-foot restaurant with Business Debut in a recent interview.

Gonzalez said his background spans more than 20 years in restaurants and hotels, including work in his extended family’s Italian restaurants in New York and as a food and beverage manager at Marriott. “It’s kind of always been in the blood,” Gonzalez told Business Debut.

The brand ties into Gonzalez’s existing “Dare Goes” ventures, including his podcast There Goes The Neighborhood and concert platform There Goes DJs. He said DARE stands for dream, act, rise and elevate.

What to Expect

Gonzalez described Dare Goes Da Pasta as a fast-service pasta bar. Guests will be able to grab a pasta bowl in a carton for takeout or sit down in a casual space with seats, couches and booths.

He said he plans to record his There Goes The Neighborhood podcast live from the restaurant about once a month.

Guests will choose a pasta, sauce and protein, assembled Chipotle-style into a bowl or carton. “You pick your protein, a sauce and a pasta, goes right in the carton,” Gonzalez told Business Debut.

The sauce lineup will feature options common in Italian restaurants, including amatriciana with pancetta, onions and red sauce; vodka sauce; pesto; Alfredo; marinara; and a Bolognese with Latin flavors. Gonzalez said a house Luciano-style sauce with white wine, tomato, basil, garlic and butter will anchor the menu.

One signature dish, the Brooklyn Bowl, will pair lemon sauce, white wine, fresh mozzarella and cherry peppers. Another, the Boricua Bowl, will highlight pernil with red and green peppers, red onions and a garlic butter white wine sauce.

Planned proteins include chicken and shrimp, along with pernil, or pork shoulder. Gonzalez said he wants the pernil to reflect his Puerto Rican roots within the pasta format.

A coffee counter branded as There Goes The Coffee will serve drip coffee, lattes, cappuccinos and espresso with a small selection of flavors. Gonzalez said he also plans to offer salads.

Opening Timeline

Gonzalez said permits were submitted this week, with build-out targeted to begin next week. “My GC is hoping that in three months we should be able to open it up and be up and running, if not four,” Gonzalez shared with Business Debut in a phone interview.

He said he is aiming for a September opening, though the official date remains to be announced.

Hours

Dare Goes Da Pasta is expected to open six days a week and close on Mondays, Gonzalez told Business Debut. Exact daily hours are to be announced.
