Multi-Unit Expansion Plans in Store for Field of Greens

Here's what we learned interviewing Chef Thomas Op’t Holt.

PORT ST. LUCIE, FL — Field of Greens plans to open its first location outside Palm Beach County in the Tradition community at 10400 SW Discovery Wy, Port St. Lucie, FL 34987, with the team targeting a summer debut, Chef Thomas Op’t Holt told Business Debut in a recent interview.

This is part of a larger expansion initiative. Additional locations include Avenir Town Center in Palm Beach Gardens, a Palm City location, and a Palm Beach International Airport site inside Concourse B, according to a press release.

Myron Miller, the current owner of Field of Greens, is leading the expansion initiative with president Dan Morris and Chef Thomas Op’t Holt.

What to Expect

The Tradition store will sit in the Heart of the Park center near the large heart landmark.

The restaurant will feature counter service and order-ahead options for breakfast and lunch, consistent with the broader Field of Greens café model.

Existing Field of Greens cafés operate in Palm Beach, West Palm Beach, North Palm Beach, Boynton Beach, Palm Beach Gardens, Alton, and other locations, with the Port St. Lucie opening marking the first step beyond Palm Beach County.

Op’t Holt described the concept as a place where guests can find “a little bit of everything” for different routines and preferences.

Field of Greens offers acai bowls, protein shakes, cold-pressed juices, smoothies, salads, sandwiches, and wraps that Op’t Holt framed as “mindful food” at “a fair price,” he told Business Debut.

Op’t Holt highlighted several items, including the Matcha Needed protein smoothie, a chicken pesto sandwich with, lemon aioli, chicken and mozzarella, and a falafel option served on specially sourced pita.

The chicken Caesar wrap has become Op’t Holt’s personal go-to, with crunchy croutons and a creamy dressing.
