TAMPA, FL — D’Rose Gastro Bar is targeting a mid-June opening at 2238 E 7th Ave Unit A, Tampa, FL 33605, bringing a family-driven concept to Ybor City. Chef Victor M. Lopez is opening the restaurant alongside executive chef Osyamil Milian, cousin and general manager Gustavo Lopez, beverage director Tatiana Gonzalez, and his father Edgar Lopez, who also serves as a partner and lead investor.

Lopez told Business Debut that the team personally handled the buildout, noting they “drilled every nail,” “painted every wall,” and “handcrafted everything that the guests will see,” alongside his father, a lifelong cabinet maker.

What to Expect

D’Rose Gastro Bar will operate as a full-service, casual dining restaurant with an emphasis on hospitality and guest experience. “We do emphasize good service, so I don’t want the image to go out as we’re fine dining, but our focus is 100% into taking care of the guests,” Lopez told Business Debut.

The space will feature a large wraparound bar with about 30 seats, along with a dining room accommodating roughly 125 to 130 guests. Additional outdoor seating is planned pending approval. The interior is designed with natural elements, including wood, plants, and soft tones to create what Lopez described as an elevated but comfortable atmosphere.

The menu at D’Rose Gastro Bar centers on a modern gastrobar concept with Colombian influence, blending global techniques with traditional ingredients. “We are a modern gastrobar with Colombian DNA,” Lopez told Business Debut.

Dishes will range from small bites to full entrees, including steak, chicken, seafood, and shareable plates. The team is incorporating international techniques from French, Japanese, and American cuisines to elevate traditional flavors. “We took inspiration from my roots and kind of elevated it using all international ways of cooking,” Lopez told Business Debut.

One featured item includes a chontaduro hummus, made from a Colombian palm fruit and served with chips crafted from pan de bono, a traditional cheese bread. “That was like a mission for me to kind of break that stereotype,” Lopez told Business Debut.

The menu will also highlight seasonal and locally sourced ingredients. “We want to be very connected to the local area… and expose the fresh seasonality,” Lopez told Business Debut.

Seafood will play a key role, influenced by the team’s personal experiences. Milian, an avid fisherman, described a process where the team would catch fish themselves and prepare it as specials. “We would go on Sundays, catch whatever we’re able to get, and then Monday we come in the restaurant, break it down, and create specials,” Milian told Business Debut.

The beverage program will feature a full bar with nine signature cocktails, including a Lulada sour made with aguardiente and a tropical fruit similar to passion fruit and kiwi.

Opening Timeline

The team is targeting a mid-June opening, though timing remains dependent on permitting and licensing approvals. “The tentative date that seems the most solid might be mid June,” Lopez told Business Debut.

Hours

D’Rose Gastro Bar plans to open Tuesday through Sunday for dinner service beginning at 4 p.m. until late evening hours. Brunch service is planned for a later phase, expected three to six months after opening, with lunch service potentially added in the future.
