CHARLOTTE, NC – Evo Kitchen & Co., a new full-service restaurant from owners Edmond (Roc Well) McMiller and Myra Wilson, is set to open August 1 at 5220 New Fashion Way Suite 400, Charlotte, NC 28278.
McMiller said the concept is designed to land in a “sweet spot” between casual and high-end dining, with quality food, a full bar, and a relaxed atmosphere. The dining room seats about 74 guests, with patio space for about 50 more, McMiller shared with Business Debut.
What to Expect
“The name Evo and the restaurant is about evolution,” McMiller told Business Debut. “The name reflects growth, forward movement and the next chapter of a larger hospitality vision.”
Evo Kitchen & Co. will offer an indoor dining room and a patio that sits beside what McMiller described as a pond or lake feature near the restaurant. He said the setting and layout are intended for family nights, girls nights, date nights, after-work visits, late-night gatherings, and private events.
Customer service will be a central focus. “We want every guest to feel respected and cared for and excited to return,” McMiller said.
Menu and Vision
McMiller said the food is rooted in Southern flavors with a global point of view. “Evo brings a global point of view to light comfort dishes, seafood, crunch, craft cocktails and bold flavors,” he told Business Debut.
The menu will feature dishes such as crab cakes, lamb chops, tiger prawn shrimp, short ribs, and chicken. Vegan and vegetarian options will also be available, McMiller said.
Evo Kitchen & Co. will have a full bar with a cocktail program McMiller described as “evolved” and visually driven, with an emphasis on unique flavor combinations and presentation.
The restaurant will offer a brunch experience on Saturdays and Sundays, including a champagne brunch tower designed for sharing. McMiller described it as an elevated brunch format built around creative visuals.
Opening Timeline
McMiller said Evo Kitchen & Co. is targeting an opening date of August 1.
Hours
Planned hours are 11 a.m. — 11 p.m. on weekdays. On Fridays and Saturdays, McMiller plans to operate 11 a.m. — 1 a.m. The business will be closed on Mondays.
Weekend brunch service will run on Saturdays and Sundays, with exact hours to be announced.
