Here's what you may have missed in one of Georgia's most active counties.
Gwinnett County has several new restaurant concepts in the works, from Colombian dining and brunch cocktails to Nashville-inspired fried seafood. Here’s what to expect from each project.
Nuestra Finca Colombian Restaurant — Lawrenceville
Address: 3153 Sugarloaf Pkwy Suite 114, Lawrenceville, GA 30045
Status: Targeting an opening around mid-October, based on the owners’ goal of opening about one month after their September 15 interview.
What to expect: Nuestra Finca will be more than a traditional sit-down restaurant. The owners are planning a full-service Colombian restaurant, cafe, coffee and ice cream stop, and full liquor bar under one roof.
Menu highlights: Colombian classics such as bandeja paisa and empanadas are expected, along with additional traditional dishes. The owners are also working with distributors that carry Colombian beer.
Hours: Planned seven days a week, serving breakfast, lunch and dinner.
Who’s behind it: Married couple Laura Suarez and Christian Vivas are opening the restaurant together as a shared entrepreneurial project.
Eggscape — Lawrenceville
Address: 4955 Sugarloaf Pkwy Suite 110, Lawrenceville, GA 30044
Status: No exact opening date yet, but soon!
What to expect: Eggscape is being developed as a breakfast and brunch bar with a full cocktail program. The Lawrenceville location will sit directly beside owner Nahom Mekonnen’s existing Illusion Sports Bar and Grill.
Menu highlights: Breakfast and brunch dishes will form the core menu, with cocktails such as mimosas available. Mekonnen said the chef is also bringing African and broader international influences into the food.
Hours: Planned daily hours are 8 a.m.–4 p.m.
Who’s behind it: Nahom Mekonnen is developing both the Lawrenceville location and another Eggscape in Brookhaven.
Bite Theory — Lilburn
Address: 4895 Stone Mountain Hwy Ste A, Lilburn, GA 30047
Status: No exact date yet, but soon!
What to expect: Bite Theory will operate as a fast-food restaurant with a drive-thru, takeout service and a small dine-in area. The concept combines elements from two Midwest restaurant brands already operated by owner Obada Karaki.
Menu highlights: Expect Nashville-style fried chicken and seafood, including wings, tenders, catfish, perch and shrimp. Rice bowls topped with chicken, fish or seafood are also planned, along with lemonade and handmade desserts.
Who’s behind it: Obada Karaki also operates Shrimp Max in Indiana and Sharks Fish and Chicken locations in Illinois.
