Ellianos Coffee Expanding with a Corporate Store in St. Cloud

ST. CLOUD, FL — Ellianos Coffee is targeting a late July opening for its first corporate-owned and operated location at 4940 E Irlo Bronson Memorial Hwy, St. Cloud, FL 34771, Executive Director Mallory Pruitt told Business Debut.

The location marks a milestone for the brand, which was founded by Scott Stewart and Pam Stewart and has grown to 78 locations, primarily through franchising, Pruitt told Business Debut.

What to Expect

The St. Cloud location will follow Ellianos’ double-sided drive-thru-only model centered on speed and consistency. “Service, quality and speed were the main goals,” Pruitt told Business Debut, noting the concept is designed to move customers through quickly without sacrificing product quality.

Guests can expect a streamlined menu built around high-quality coffee, an expanding energy drink line, and a mix of breakfast, lunch, and snack options. “We try to keep the menu very simplified because speed is our biggest priority—getting customers in and out as quickly as possible,” Pruitt told Business Debut.

The brand is especially known for its frozen coffee drinks, or “freezers,” with flavors like caramel and turtle ranking among top sellers. On the food side, offerings include New York-style bagels shipped in fresh, along with sandwiches and quick bites designed to meet strict preparation time standards, Pruitt told Business Debut.

Ellianos was founded after Scott and Pam Stewart identified an opportunity to bring a drive-thru-focused coffee concept to the Southeast after seeing similar models out west, Pruitt told Business Debut.

“We try to keep the menu very simplified because speed is our biggest priority,” Pruitt told Business Debut.

As the company’s first corporate-run location, the St. Cloud store will allow the corporate team to operate in a franchisee role and refine internal systems, including its training platform designed to guide franchisees through the full lifecycle of opening and operating a store, Pruitt told Business Debut.

Florida Development Pipeline

Ellianos Coffee continues to expand across Florida, with multiple locations in development in markets such as Ormond Beach, Jacksonville, Lakeland, and Ocala, as the brand pushes growth further south into new, high-traffic areas, Pruitt told Business Debut.

Community Involvement

Community engagement will be a central focus for the St. Cloud location, aligning with the company’s broader approach across all markets.

“We do a lot of donations to local schools where our stores are being developed,” Pruitt told Business Debut.

The brand supports local schools through initiatives such as DonorsChoose, along with teacher appreciation efforts and team sponsorships. Corporate also provides marketing support to help franchisees execute community outreach through signage and promotional materials, Pruitt told Business Debut.
