David Lawrence, a seasoned restaurateur, shared with Business Debut that his newest venture — Wild Rooster — is set to open between August 24 and the end of the month. The fast-casual restaurant will be located at 35 N Federal Hwy, Fort Lauderdale, FL 33301, FL, and will focus on smoked meats prepared using high-tech, programmable cooking equipment.

Spanning 2,000 square feet, the venue features 45 indoor seats and a 24-seat outdoor patio. Inside, patrons will enjoy an upbeat environment featuring an interactive TV wall display.

Wild Rooster will operate daily from 11 am – 10 pm. Patrons can benefit from online ordering, food kiosks, and delivery services through third-party companies. On the menu are smoked meats such as chicken, ribs, brisket, and pulled pork, paired with fresh sides like steamed vegetables, roasted potatoes, and Hawaiian fried rice. Additionally, Hawaiian shaved ice will be featured for dessert. Diners can enjoy house-made sauces, two of which are crafted by Lawrence himself.

David Lawrence draws on decades of industry experience, with his culinary journey beginning in 1974. An early Papa John’s franchisee in South Florida alongside his brother, Lawrence expanded to 36 locations. Recently, in his role as a restaurant consultant and equipment supplier he discovered the Unox ovens that will be integral to Wild Rooster’s kitchen. “It's just amazing how they cook the quality of the product that comes out of them,” Lawrence expressed.

Wild Rooster marks a family endeavor, involving Lawrence’s twins, Austin and Auburn. Austin will assist with daily operations while Auburn, a marketing graduate from the University of Kentucky, will manage promotions and social media efforts.
