BRADENTON, FL — Wardo's Smokin Tacos & BBQ, a new fast-casual concept from Eddie and Kate Meek, is targeting a September 16 opening at 2127 Cortez Rd W, Bradenton, FL 34207, the Meeks shared with Business Debut in a phone interview.

What to Expect

The concept blends smoked barbecue with Mexican dishes and what Meek described as West Coast flavors. The menu will feature smoked meats incorporated into tacos, enchiladas, quesadillas and burritos, Meek said. Spanish rice and refried beans will be key sides.

Wardo's will also offer traditional birria, carne asada and chicken, Meek told Business Debut. The Meeks bring about 27 years of restaurant experience across California, Utah and Florida to the project, according to Meek.

Wardo's Smokin Tacos & BBQ will use a walk-up counter service model. Guests will order at the counter, then take a seat while staff bring food to the table, Meek told Business Debut. Staff will handle all beverage service, including beer and wine.

The Meeks also operate Pork Bellies, a sit-down restaurant with a full bar at 9516 Cortez Road in Bradenton. The couple previously ran two Pork Bellies locations in Utah before selling those locations and relocating to Florida.

The new space on Cortez Road is undergoing cosmetic updates. The team is toning down a previously loud, colorful interior and aiming for a crisp, clean look with design details that reference both Mexican and barbecue themes.

Opening Timeline

The team is targeting September 16 for opening. This date is a goal and could shift based on final preparations.

Hours

Planned hours are 11 a.m. — 8 p.m., Meek said. The restaurant will close on Mondays.
