If you've ever wondered, 'could I start a coffee pop up that becomes a cafe?' we're going to tell you Amanda and Anthony Sciarrino's story. Their pop up, Jelly Bean Coffee, is doing just that: becoming a brick and mortar coffee shop.

In a phone call with Amanda, we learned about their plans to open in West Palm Beach and the origins of their small business.

What to Expect

What started as a "home cafe" will soon be a brick and mortar at: 3700 S Dixie Hwy #4, West Palm Beach, FL 33405. The Sciarrino's are spearheading the design of the space and are drawing inspiration from European and Asian cafes.

“We’re really excited about being able to create a space that’s fully from us,” Amanda said. They will feature indoor and outdoor seating.

Jelly Bean Coffee is known for high quality coffee and matcha and housemade syrups. Partnering with local bakers, they will offer food items like empanadas, quiche, toast and sourdough-based croissants in the brick and mortar.

Having established Jelly Bean Coffee across community events, the couple plans to utilize their space for similar events once opened. While an opening date is not firmly established, expect Jelly Bean Coffee to debut before the end of the year.

How They Did It (And How You Can Too)

This all began about a year and a half ago.

Amanda had long known she wanted to open a coffee shop. In most stories, this is when a founder leases a storefront, invests tens of thousands, and hopes that their dream is profitable.

But the couple took a methodical route that dramatically lowered their risk.

Before investing money, they used their Breville espresso machine and served friends and family while experimenting with different beans and matcha. After receiving strong support, the couple then decided to invest in equipment: a cart, a better coffee grinder, and a better espresso machine.

“I was constantly cold emailing people, I was cold DMing people, being like, "Hey, can we pop up here? Can we join this event?" Amanda said.

Through persistence, she and Anthony began showing up at events and making a name for themselves.

Creating a Following

In South Florida, seasonality is a major issue for most businesses. But Jelly Bean Coffee has counteracted that by hosting their own summer clothing markets and serving their coffee there.

Over the course of the past year and a half, Jelly Bean Coffee has established a base of regulars and enthusiasts who have enabled them to open their brick and mortar.

The cool thing about their story is the testing and experimentation on the smallest imaginable scale: serving coffee out of their own home. Then, they made slow, reasonable steps forward.

You don't have to put everything on the line on day one to open a business. You can do it slowly and carefully without losing your shirt if something goes wrong. Be like Amanda and Anthony.
