HALLANDALE BEACH, FL — The Wagyu House by Meat N’ Bone is now in soft opening and moving toward a full opening phase at 601 N Federal Hwy #113, Hallandale Beach, FL 33009. Co-owner Luis Mata told Business Debut the restaurant is already welcoming guests as the surrounding plaza nears completion.

What to Expect

The Wagyu House is a full-service steakhouse centered on premium beef and an educational dining experience. Guests can explore more than 32 different cuts of beef, ranging from USDA Choice to Japanese Wagyu, allowing diners to compare flavor, texture, and quality levels, Mata told Business Debut.

The 3,000-square-foot space seats approximately 120 guests, split between indoor and outdoor seating. The restaurant features an open, light-filled design with marble tables and a central bar, creating a contrast from traditional dimly lit steakhouses, Mata shared with Business Debut.

A retail boutique is built into the restaurant, allowing guests to browse and purchase from more than 400 curated protein products. The selection includes a wide range of beef cuts across multiple grades, along with poultry, pork, and seafood sourced through the Meat N’ Bone network, giving customers the option to recreate the experience at home, Mata told Business Debut.

The menu was developed by executive chef Chucho Rojas, who trained in France under renowned chef Pierre Gagnaire and worked in multiple Michelin-starred kitchens, Mata told Business Debut.

Signature items include Wagyu nigiri prepared tableside, along with a wide range of steaks across multiple grades, from USDA Prime to Japanese Wagyu. The menu also features seafood options such as branzino and salmon, sourced through specific programs to ensure quality, Mata shared with Business Debut.

Mata pointed to a few personal favorites that highlight the range of the menu. “The Wagyu nigiri is a must-have,” he told Business Debut, noting the tableside preparation and use of Japanese Wagyu. He also highlighted the crab cakes as a go-to dish, along with the Wagyu “Kokusan” cut, a cross between Japanese Wagyu and dairy cattle that offers both rich marbling and a more traditional beef flavor.

The concept centers on what Mata describes as “affordable luxury,” with steaks ranging from approximately $30 to $240, allowing guests to explore different cuts and grades based on their preferences.

“Our mission is to change the way people think about and consume proteins,” Mata told Business Debut. “We want guests to understand the sourcing, the grading, and the work behind each cut, so they can better appreciate what they’re eating and find what truly fits their taste.”

Locations and Growth

The Wagyu House represents the 11th concept under the broader Meat N’ Bone brand. Mata told Business Debut the company operates eight retail boutique locations, along with additional concepts including Wagyu Bar in Coral Gables and Meat N’ Bone Kitchen.

He added that the company’s largest channel is its e-commerce platform, which distributes products nationwide.

Ownership

The business is led by Luis Mata and his partner Gabriel Llaruavo, along with key investors including the Banoni family and Kevin Williams. Mata emphasized the company’s independent roots, noting it was built from the ground up and remains focused on quality and customer experience.

“This is a family-owned business,” Mata told Business Debut. “We truly care about what we’re building and the experience we provide.”

Opening Timeline

The restaurant is currently in soft opening and transitioning into its full opening phase, with timing tied to the completion of the surrounding plaza, Mata said.

The Wagyu House is open Tuesday through Sunday, with lunch service Tuesday through Friday and dinner service on weekends, Mata told Business Debut. Online listings currently show dinner hours on Friday and Saturday from 5 p.m. – 10:30 p.m., though full weekly hours may vary.
