Saiko Sushi & Korean to Open October 31 in Jacksonville Beach
Elevated all-you-can-eat dining is coming to Jacksonville Beach, featuring fresh sushi and traditional Korean dishes.

Jacksonville Beach, FL — Saiko Sushi & Korean will open October 31, offering an elevated all-you-can-eat experience featuring Japanese sushi and authentic Korean cuisine. Owners Sim and Liu told Business Debut the restaurant is fully Korean- and Taiwanese-owned, emphasizing genuine Korean recipes made by Koreans rather than the buffet-style concepts often found in the area.
What to Expect
The 75-seat restaurant will operate as a full-service, made-to-order establishment rather than a buffet. Guests mark their selections from a printed menu, and dishes are freshly prepared and served to the table.
Lunch is priced at $24.99, dinner at $34.99, and children ages 3 to 12 dine for $14.99. The location previously housed Kaza Sushi Burrito and has been redesigned for a dine-in setting.
Menu and Vision
Saiko, meaning “the best” in Japanese, will feature a mix of sushi rolls, nigiri, sashimi, and traditional Korean dishes. “We wanted to bring more diverse Asian food to Jacksonville Beach,” Sim told Business Debut. “Our Korean food is real Korean food, made by Koreans, using quality ingredients.”
Liu added that the sushi program will reflect his California background, using higher-grade ingredients for freshness and presentation. “We’re focused on quality rather than competition,” he said.
Opening Timeline
Renovations are complete, and the restaurant is scheduled to open October 31.
Hours
Open Tuesday through Sunday, 11 a.m. – 3 p.m. and 5 – 9 p.m. Closed Mondays.
