ATLANTA, GA — Saffron Darbar - Authentic Indian Cuisine is targeting a January 2026 opening at 5975 Roswell Rd Ste D233, Atlanta GA 30328, owner Datta Gajakas told Business Debut. The full-service Indian restaurant will take over the existing Thai Restaurant Sandy Springs space and convert it into his new concept.

What to Expect

Saffron Darbar - Authentic Indian Cuisine will operate as a full-service, family-style restaurant with dine-in service. The dining room will seat about 40 to 45 guests. Gajakas said he is converting the current Thai restaurant into an Indian concept after taking over the lease from the existing owner.

The restaurant will focus on North Indian cuisine at launch, with the possibility of expanding the menu over time. Menu specifics are not available at this time. Gajakas said Saffron Darbar - Authentic Indian Cuisine is an independent brand.

Opening Timeline

Gajakas said he is waiting on final paperwork to wrap up around the end of December. Once complete, the Thai restaurant will fully shut down for about two weeks of renovations and decor changes. Saffron Darbar - Authentic Indian Cuisine is targeting a January 2026 opening, with an exact date to be announced.

Hours

The current plan is to open seven days a week from 11 a.m. — 10 p.m. Final hours will be confirmed closer to opening.
