BOYNTON BEACH, FL — Bud’s Chicken & Seafood is set to open its newest location on February 10 at 8801 Boynton Beach Blvd, Boynton Beach, FL 33472, marking the seventh restaurant for the longtime family-owned brand, owner Phillip Brinkman told Business Debut.

What to Expect

Bud’s Chicken & Seafood is a fast-casual restaurant centered on made-to-order fried chicken and seafood, a model the family has refined over generations. The menu focuses on bone-in chicken, chicken fingers, wild-caught Alaskan cod, shrimp, and clams, with each item prepared fresh right after the order is placed.

Brinkman said the company has never prioritized speed at the expense of quality. “Everything is cooked to order,” he told Business Debut. “If you order a fish sandwich, they’re dropping the fish when you order it and building that sandwich from scratch.”

That commitment to freshness begins with the protein itself. “We use fresh chicken, never frozen,” Brinkman said. “Our fingers are actual tenderloins of the breast, not chopped or pressed meat.”

Brinkman also pointed to the brand’s in-house preparation process, which includes a commissary that supports all locations. “Some of our sides and our sauces are actually made in house by us at our commissary,” he told Business Debut. Items like coleslaw, potato salad, macaroni salad, tartar sauce, and cocktail sauce are all made from family recipes, he said.

Ownership and History

Bud’s Chicken & Seafood was founded in 1957 by Bud Brinkman, with the original restaurant opening in Boynton Beach. After Bud Brinkman’s death in the early 1970s, the business remained in the family. “My grandmother and my uncles and my dad took over and ran the business,” Brinkman said.

The second generation included Michael Brinkman, Tom Brinkman, Mark Brinkman, and Tim Brinkman, alongside Brinkman’s grandmother. “My two uncles just retired at the end of the year last year,” he said, noting their decades-long involvement in growing the brand.

Today, the company is led by the third generation. Phillip Brinkman works alongside his brothers Christopher Brinkman, Nicholas Brinkman, and Luke Brinkman. “This is a team effort,” he told Business Debut.

Team and Culture

Brinkman said the company’s longevity is rooted in the people who run it day to day, many of whom have spent decades with the brand. “Our managers have been with us, on average, about 25 years,” he told Business Debut, calling that stability a reflection of how the family approaches both leadership and operations.

He said those long-standing relationships have shaped Bud’s identity and growth philosophy. “We wouldn’t be here without them,” Brinkman told Business Debut, noting that many employees have built full careers with the company and remain central to how the family thinks about the future.

Opening Timeline

The Boynton Beach restaurant is the first new Bud’s location to open in more than two decades. The last store opened in Royal Palm in 2001. “We haven’t opened a new store in about 25 years,” Brinkman said.

He said the long pause reflects the family’s deliberate approach to growth. “We could probably expand to 35 stores in a really quick time, but I just don’t think that that’s who we are as a business,” Brinkman told Business Debut.

Hours

The Boynton Beach location is planned to operate seven days a week from 10:30 a.m. to 9 p.m.
