Pha'Ya Thai & Sushi Restaurant Opening in Palm Bay

PALM BAY, FL — Pha'Ya Thai & Sushi Restaurant is targeting a mid- to late July opening at 130 St. Johns Heritage Parkway NW, Suite 106, Palm Bay, FL 32907.

Owners Sam Dyer, Davut Munkong, Nuy Dyer and Keaw Munkong are preparing to bring a full-service Thai and sushi restaurant to a fast-growing area of the city. Sam Dyer, a retired Marine Corps colonel and Supreme Court mediator, told Business Debut the family is building the restaurant from the ground up and wants it to be “totally involved in the community.”

What to Expect

The restaurant will offer full-service dine-in with seating for about 55 guests inside and another eight seats on a small patio, Dyer told Business Debut. The team is also planning a takeout program to serve nearby families, business professionals and the surrounding neighborhood.

“It’s a full-service sit-down restaurant,” Dyer told Business Debut. He said the goal is to create “a place where individuals can enjoy a good Thai meal” in a welcoming setting with a strong community presence.

Dyer said the restaurant plans to take part in neighborhood events, partner with local businesses and connect with nearby Heritage High School. The team also plans to host cultural events, sushi rolling workshops and cooking demonstrations as part of its community focus.

“We want to make sure we have ongoing engagement within the community and local partnerships,” Dyer told Business Debut. “It’s something that folks would really enjoy... a place where people know your name and want to come back.”

Menu and Vision

Guests can expect a menu that blends authentic Thai cuisine with fresh sushi, including pad Thai, drunken noodles, tom yum soup, fried rice, crispy fish, crispy duck, lobster roll, red dragon roll, spicy crab roll, sashimi, temaki hand rolls, teriyaki dinners, lunch bento boxes and a kids menu, Dyer told Business Debut.

Many of the sauces and food preparations will be shaped by Nuy Dyer’s experience in Thailand. “A lot of the things that we’re making actually comes from my wife putting together her various sauces and stuff because she used to be a street vendor in Thailand,” Dyer told Business Debut.

Affordability and consistency are central to the concept. “Prices is not going to be too high,” Dyer told Business Debut. “We want folks to be able to afford and order from us and enjoy what we have to offer.”

He added that the long-term vision is to build a place where customers feel known and comfortable. “As the community grows so will we grow with the community,” Dyer told Business Debut.

Opening Timeline

The restaurant is targeting a middle- to end-of-July debut, pending permitting and buildout, Dyer told Business Debut. The location is part of a newly built shopping center near Malabar Road and St. Johns Heritage Parkway.

Hours

Pha'Ya Thai & Sushi Restaurant plans to operate Monday through Saturday from 11 a.m.-2:30 p.m. and 4 p.m.-9 p.m. The restaurant will be closed on Sundays, Dyer told Business Debut.
