Downtown Melbourne is getting a new tropical eatery with creative cuisine, two bars, and late-night service.

MELBOURNE, FL – A fresh new full-service restaurant is getting ready to make waves in the heart of Downtown Melbourne. Set to open within the next 30 days, Ocean Bay Grill will be located at 411 E New Haven Avenue, Melbourne, FL 32901. Co-owner Angel Morales told Business Debut the concept will combine tropical-inspired cuisine, vibrant indoor and outdoor seating, and a welcoming atmosphere for all ages.

“We’re building a space where families and friends can enjoy a good meal and a great vibe, even late into the night,” Morales said. Ocean Bay Grill plans to serve food daily until 1:00 a.m., filling a much-needed gap in the area for late-night dining that isn’t tied to bars or clubs.

Tropical-Inspired Menu with Creative Flair

While the full menu is still under wraps, a few signature dishes are already generating buzz. The Velvet Chicken & Waffle, which pairs spicy fried chicken with a red velvet waffle, and fresh Red Snapper served with tropical flair. Other items will include Caribbean and Latin influences with an emphasis on bold flavors and hard-to-find dishes.

“We’re not doing typical downtown food,” Morales added. “Everything is going to feel different and special here.”

The kitchen will be led by Chef Gary Bennett, who also oversees operations at several beachside resorts. His background brings both creativity and professionalism to the Ocean Bay Grill menu.

Two Bars, One Goal: A Great Time

The restaurant spans 2,400 square feet and will offer a total of 78 seats, with plans to expand. Guests will be able to choose from indoor or outdoor seating, and enjoy food or drinks at either the indoor or outdoor bar. Morales describes the style as tropical, full-service, and elevated without being pretentious.

The team behind Ocean Bay Grill includes co-owner Dave Flemings, a successful entrepreneur who also owns Flemings Roofing, and Tim of Push Design Marketing, who is leading branding efforts. The restaurant's online presence is still under development but is expected to launch ahead of opening.

This marks Morales’s second venture in Melbourne. He also owns Kava T Club, a popular local café located at 809 Palmetto Avenue, known for fresh juices, espresso drinks, and its calm, alcohol-free atmosphere.

Hours of Operation

Ocean Bay Grill will be open: Monday through Sunday; 1:00 p.m. to 1:00 a.m.
