Nōnnō Umbertō Will Bring Italian Seafood and Steaks to Sarasota
The new concept will blend authentic Italian recipes, steaks, seafood, and brick-oven pizza in a 300-seat setting.

SARASOTA, FL – A new Italian-inspired concept is coming to St. Armands Circle as husband-and-wife duo Simone and Amber Salustri prepare to open Nōnnō Umbertō Italian Seafood and Steakhouse at 22 S Boulevard of the Presidents, Sarasota, FL 34236. Salustri told Business Debut they’re aiming for a late December 2025 or early January 2026 opening, though construction timelines may shift.
The restaurant is a rebirth of the family’s longtime establishment, Le Colonne, which first opened in 1998 but was destroyed by back-to-back hurricanes Helene and Milton. “We almost lost everything,” Amber said. “But we truly believe everything happens for a reason, and this new project will come out even better than before.”
The new restaurant will carry forward the legacy of Simone’s father while embracing updates for today’s dining scene.
The Concept and Menu
Nōnnō Umbertō differs from a typical American steakhouse because it combines authentic Italian cuisine with high-quality steaks and fresh, locally sourced seafood. Guests can enjoy pasta made right in the kitchen, some of which comes from family recipes from Simone's birthplace, Anzio, Italy. The menu also features excellent steaks, crudo dishes evocative of Italian sushi, fresh seafood, and pizza baked in a brick oven.
The restaurant will feature both indoor and outdoor seating, accommodating an estimated 300 seats. Dining will range from casual fine dining areas with shareable collaborative tables to a private section featuring tablecloths for a more refined atmosphere.
From Food Truck to Full Scale
After the hurricanes, the Salustris launched a food truck to keep their dream alive, quickly booking out months in advance. That success helped pave the way to relaunching a brick-and-mortar restaurant. “We basically don’t have enough to open yet fully, but we have enough to try,” Amber explained. “We’re determined to keep the family history going.”
The couple previously ran another restaurant, Eorganico in Bradenton, before closing it during the pandemic to return home and help Simone’s father with Le Colonne.
Opening Hours
While hours are still being finalized, Amber confirmed that the restaurant will serve lunch and dinner daily, with the possibility of adding breakfast service in the future. The restaurant will offer full-service dining with dedicated servers, striking a balance between comfort and elegance.
