LAGRANGE, GA — El Callejón GTO is preparing to open in downtown LaGrange in the coming months, with co-owner Juan Pablo Sanchez telling Business Debut the team is currently in construction. An exact street address has not yet been announced.

Sanchez is opening the restaurant alongside partner Aldo Adrian Ramirez. The concept draws from their roots in the Mexican state of Guanajuato, abbreviated as GTO.

What to Expect

El Callejón GTO is designed as a fast-casual taqueria inspired by traditional street-style spots in Mexico. Guests can expect counter service and a menu centered on tacos, quesadillas and burritos.

The restaurant will incorporate influences from Guanajuato, with recipes and flavors reflective of the owners’ home state.

In addition to traditional tacos and quesadillas, the team plans to introduce select modern Mexican dishes. One example under development is birria ramen, a twist on the popular stew served as a noodle soup.

Sanchez described the concept as traditional at its core with a modern touch. The goal is to offer authentic flavors while incorporating select contemporary menu items.

Alcohol service, including beer and margaritas, is planned for the future pending permits.

El Callejón GTO shares ownership ties with Casa Piro.

Opening Timeline

The team is targeting an opening within the next couple of months. An official opening date will be announced at a later time.

Hours

El Callejón GTO plans to serve lunch and dinner. The restaurant is considering operating six or seven days a week, with final hours to be announced.
