BOCA RATON, FL - Mino Omakase is targeting a March opening at 114 NE 2nd St, Boca Raton, FL 33432, according to owner Paul Greenberg, who told Business Debut the team is in the final stages of preparation.

The concept is designed as a traditional omakase experience with a quasi members-only structure in an intimate, high-end setting.

What to Expect

Mino Omakase will feature a 10-seat omakase bar along with approximately 20 additional seats in a lounge area, accommodating about 30 guests total.

The restaurant will offer a 21-course omakase experience with two seatings per night. For guests unable to secure an omakase seat, the lounge will serve approximately 15 menu items alongside a craft cocktail and sake program.

Greenberg said the team identified an opportunity to introduce a speakeasy-style omakase venue to Boca Raton. “There’s nothing like it around,” he told Business Debut.

The omakase program will be led by Chef J.M. Canales, previously of Mila in Miami. The menu will follow a traditional omakase format, emphasizing technique and a curated progression of courses.

The concept stems from Greenberg’s partnership with Vaughn Dugan, whom he described as the visionary behind Mino Omakase and Kapow Noodle Bar. Additional partners include Jamie Day and Corri Day.

Greenberg, who has spent 35 years in hospitality, is also the founder of American Social and currently serves as CEO of Kapow Hospitality. He said community integration remains central to his approach. “In order to be a successful restaurateur, you have to become a fabric of the community,” he told Business Debut.

Membership Club

Mino Omakase will operate with a membership component, though it is open to the public.

Guests may purchase a $25 day pass, which is applied toward their food and beverage total. Tiered memberships are also available starting at $500, with credits applied toward dining. Early members receive enhanced value on their pre-paid credits and access to exclusive programming, including omakase preview nights and bluefin tuna cutting and tasting events.

Memberships are nearly sold out ahead of opening.

Hours

The current plan is to operate seven days a week, with omakase seatings most likely offered Wednesday through Saturday. Additional days may be added, and some days may be reserved for private events. Final hours are to be announced.
