Culinary Duo Launching Floza Craft Pizza in Palm Beach Gardens

New wood-fired pizza restaurant specializing in sourdough pizza opens this September.

Floza Craft Pizza, a new wood-fired pizza restaurant, is set to open in early September at 6271 PGA Boulevard unit 207, Palm Beach Gardens, FL 33418, according to co-owner Erwin Toribio. Toribio and his business partner Edward Sherwood are bringing their extensive culinary backgrounds to this new venture.

The restaurant will specialize in sourdough pizza made with naturally derived yeast, handmade pasta and a seasonal menu. Floza Craft Pizza will seat 32-35 people, offering full service for dinner and counter service during lunch hours, six days a week (closed on Sundays).

Erwin Toribio, originally from New York City, was on the culinary team for vegetarian and vegan restaurant Nix during its Michelin star achievement. There, he honed his skills under the guidance of acclaimed chef and restaurateur John Fraser. After moving to Palm Beach, Toribio worked at Grato under Chef Clay of Buccan. With Floza, he aims to bridge the gap between fine dining and casual dining, bringing his food to a wider audience.

Edward Sherwood, hailing from Connecticut, brings 15 years of culinary experience to the table. He started his career working in Hartford and was most recently the chef at the Cooper on PGA Boulevard. Sherwood and Toribio met while working at the Old Palm Beach hotel, Toribio said.
