BROOKSVILLE, FL — Brooksville Bagels is targeting an August 1 opening at 330 Ponce De Leon Blvd, Brooksville, FL 34601, from co-owners Anastasia Alaimo and her husband Michael Alaimo, who will serve as the primary face of the business, Alaimo told Business Debut.

The concept has been in development for over two years as the couple brings a New York-inspired, preservative-free bagel shop to the Brooksville community.

What to Expect

The concept centers on bagels shipped directly from New York, with every sandwich and menu item built around them. Guests can expect a quick-service format with a walk-up ordering system and an open kitchen where customers can watch their food being prepared, Alaimo told Business Debut.

The space will include about 28 seats, featuring both community-style seating and smaller tables. A fresh-squeezed “festival lemonades” program will offer made-to-order drinks with customizable flavors inspired by fair-style beverages, Alaimo said.

Brooksville Bagels will combine traditional offerings with customizable options and shareable items. Signature items include “The Lox” bagel with smoked salmon, capers, onion, and dill.

A key differentiator is the option to order items “chopped” or “stacked,” allowing guests to customize how ingredients are combined. “We’re going to mix all your ingredients similar to a Cold Stone-style experience,” Alaimo told Business Debut.

The menu will also feature a bagel flight with multiple bagels and a selection of cream cheeses, designed as a shareable experience. The coffee program will include specialty drinks such as a toasted s’mores coffee with marshmallow cream and graham cracker topping.

Ownership and Background

The Alaimos are first-time restaurant owners bringing the concept to life after identifying a gap in the local market. Michael Alaimo has more than 25 years of experience as a realtor and mortgage loan originator, while Anastasia Alaimo owns Succulent City, a plant and gift shop that has operated for six years.

The couple originally purchased the neighboring building with plans to expand Succulent City before deciding to convert the space into a bagel shop. “One day we were at a bagel shop and the line was out the door,” Alaimo told Business Debut. “He said, ‘I would really like to open up a bagel shop,’ and I said, ‘That’s what we’re going to do with the building.’”

Opening Timeline

The team is targeting an August 1 opening, pending permitting and inspections, Alaimo told Business Debut.

Planned hours are 6 a.m. — 2 p.m., with the business expected to be closed on Wednesdays.
