MIAMI, FL — Allegro Ma Non Troppo, a new full-service restaurant from Carlos Galan and his sister Mar Galan, is targeting an opening in the second week of April 2026 at 1000 S Miami Ave, Miami, FL 33130. Galan told Business Debut the concept will center on a simplified, oven-driven menu and a service style designed to balance speed and experience.

What to Expect
The restaurant will offer indoor and outdoor seating with approximately 45 to 50 seats. Service will blend elements of full-service dining with fast casual, where guests can either mark selections on a clipboard menu or order through a server.
The name Allegro Ma Non Troppo translates to “fast, but not too fast,” reflecting the intended pace of service. “It’s between fast food and fine dining and fast casual dining,” Galan told Business Debut.
Menu and Vision
The kitchen will operate entirely from a pizza oven, with no fryer or flat top. The menu will feature three appetizers, three main courses, three sides, and one dessert.
Main dishes include oven-prepared branzino, a chicken cotoletta styled like a milanesa but toasted instead of fried, and a “lazy lasagna” made with two layers for a lighter approach. Appetizers will include a baguette with olives served with stracciatella, a Caesar salad using the original Caesar Cardini dressing, and a Margherita flatbread.
Sides will include arugula and cherry tomato salad, creamed spinach, and roasted potatoes with ricotta. Galan described the concept as detail-focused, saying, “We are not a restaurant. We are a detail company that sells food,” told Business Debut.
Galan brings more than 30 years of experience in the restaurant industry and currently operates multiple concepts in Miami, including Dolores But You Can Call Me Lolita and Crazy About You, along with managing an independent Starbucks franchise.
Galan was intentional in mentioning Vanessa Velez as customer experience designer and Helda Restrepo as interior designer being influential in creating a beautiful environment for guests.
Opening Timeline
The team is targeting the second week of April 2026 for opening.
Hours
Initially, hours will be dinner only from 5 p.m. – 11 p.m. The restaurant plans to expand to 11:30 a.m. – 11 p.m. seven days a week.
