Business Debut spoke with the leaders behind four new restaurants preparing to open soon in greater Tampa. The Greyson, Con Amor, Byte, and Quiote Tequilaria are making plans from Apollo Beach to Templa Terrace.

The Greyson — Apollo Beach
Address: 6192 Paseo Al Mar Blvd., Apollo Beach, FL 33572
Status: Targeting the second week of March (contractor-dependent).
What to expect: Semi-upscale-casual sports bar with ~3,500 sq. ft., about 160 seats inside and out, plus a ~600 sq. ft. patio. The layout is planned to mirror the Palmetto location, with the bar on the left and a slightly larger dining room.
Menu highlights: A consistent core menu across locations, with potential add-on local beers depending on the market. Big focus on game-day viewing with a high-end A/V setup.

Con Amor — Tampa

Status: Grand opening is planned for Feb. 6.
What to expect: Modern Mexican in an upscale-casual lane, built around fresh masa made in-house via nixtamalization. About 120 seats, plus a front patio and guest access to the parking garage behind the building.
Menu highlights: Individually built tacos, plus masa-forward standouts like tatelas, “mastacini,” and chochollotes with braised duck.

Byte — Temple Terrace

Status: Targeting a February opening (timing may shift slightly as construction wraps).
What to expect: Fast-casual, counter-service smash burgers with ~30 seats inside and a sleek, urban design. It’s built to feel “premium” even without waitstaff.
Menu highlights: Three core smash burgers (classic, house sauce, truffle), plus a Lebanese-inspired chicken sandwich and a falafel-style veggie smash. Fries, onion strings, and nugget-style bites, plus cookies and milkshakes.

Quiote Tequilaria — South Tampa

Status: Targeting March, pending final construction and training.
What to expect: An intimate fine-dining Mexican room (about 70–80 seats) with candlelit stone walls, subdued lighting, and agave-focused art. Designed for date nights and special occasions.
Menu highlights: A limited, refined menu led by Executive Chef Felicia Lacalle, plus a serious additive-free tequila and mezcal program overseen by Adam Welch.
