True Vegan by Chef Rahein

True Vegan by Chef Rahein is coming from Chef Rahein Jones, who formerly opened The New Vegan, which he cited as the first vegan concept to open in Delray Beach.
Now, he’s bringing entirely homemade vegan cuisine—including the proteins—to Delray. He told Business Debut he will source some of his produce from his own 10-acre farm in Loxahatchee.
If your first thought is “well, I’m not vegan,” Chef Jones told Boca Magazine: “You don’t have to be vegan to enjoy vegan.”
The restaurant has been developing for numerous months. Chef Jones initially spoke with Business Debut in December 2024 (article) after announcing the concept on Instagram. He anticipated a few months of buildout before opening.
Now, they are soft opening November 15–16; reserve a spot if you still can.
Lume Bistro and Lounge

Lume Bistro and Lounge recently opened and is coming from restaurateur and head chef Krystal Powell. The upscale Caribbean restaurant, bar, and lounge features daily DJs and chef-driven Caribbean fare from Powell, who is Caribbean herself.
She told Business Debut that she got her start in the food business as a food truck owner and has graduated onto bigger and better (article). Lume Bistro and Lounge opened on 11/8/25.
