CHIPLEY, FL — The Rustic Rail Pizzeria & Provisions is preparing to open later this month at 827 Main St., Chipley, FL 32428, bringing the first wood-fired pizza concept to Washington County, owner Fareed “VJ” Nandlal told Business Debut. The downtown restaurant is targeting an opening toward the end of January, pending final preparations.

What to Expect

The Rustic Rail Pizzeria & Provisions is a fast-casual, full-service restaurant centered on wood-fired pizzas with strong Southern and Cajun influences. Guests will order at the counter before being seated, with a team checking in throughout the meal. The space will offer about 50 indoor seats, along with a small outdoor patio where the wood-fired oven will be located.

The restaurant occupies the former Sister Sweets space in downtown Chipley, placing it directly along the city’s Main Street corridor and within walking distance of other local businesses.

Nandlal said the menu blends traditional pizza-making with flavors inspired by his upbringing in Baton Rouge, Louisiana. “The ‘provisions’ part of our name really means Southern food,” he told Business Debut. “I grew up eating Cajun food, and we want to bring some of that into what we’re doing here.”

Among the standout starters is the Déjà Vu Dip, a Cajun-style spinach dip made with andouille sausage, peppers, a Cajun cream sauce, spinach, and Parmesan cheese, served with garlic bread. Signature pizzas include Uncle Pete’s Hot Honey Pizza, built on an extra-virgin olive oil and garlic base and topped with mozzarella, andouille sausage, Italian sausage, bell peppers, hot peppers, crushed garlic, and house-made hot honey crafted from Florida tupelo honey.

The menu will also include cauliflower crust options, rotating monthly pasta specials, and seasonal dishes such as crawfish bowls during crawfish season.

Ownership and Partners

The restaurant is owned by Nandlal and his fiancée, Dejah Music, who is also involved in day-to-day operations. Nandlal emphasized the importance of recognizing the building’s landlords and partners, Warren and Kristen Laurent, who helped identify the downtown location and encouraged the couple to bring the concept to Chipley.

“They really wanted us in this building, and they’ve been there for us every step of the way,” Nandlal told Business Debut.

Opening Timeline

The team is targeting an opening toward the end of January, aiming to welcome guests before the month concludes.

Hours

The Rustic Rail Pizzeria & Provisions plans to be closed Sundays and Mondays, with lunch and dinner service Tuesday through Saturday. Initial hours are expected to fall around 11 a.m. to 9 p.m., with final hours to be announced.
