EUSTIS, FL — What The Pho, a compact Vietnamese noodle shop from owner Darren Trinh, is preparing to open at 459 Plaza Dr, Eustis, FL 32726. Trinh said the buildout is about 70 percent complete and he is targeting the end of this month, pending plan review and inspections, he told Business Debut.
What to Expect
The 1,000-square-foot dine-in space will seat about 30 guests and focus on a streamlined service model operated by Trinh and his aunt. “This is my aunt’s recipe—Vietnamese white noodle soup—and we’re keeping the menu short so we can do it well,” Trinh told Business Debut.
Menu and Vision
The highly focused menu centers on Vietnamese white noodle soups derived from Trinh’s aunt’s family recipes. The lineup includes a house combo pho with choices between rare steak, meatballs, assorted beef cuts, and tendon, plus several additional pho variations. Bánh mì, Vietnamese iced coffee, and a Vietnamese white spicy noodle will be offered, with the spicy noodle served only on weekends.
Simple rice plates—such as pork and barbecue beef rib—round out the offerings. “A lot of neighbors aren’t familiar with pho; we want them to come in and taste it,” he told Business Debut.
Opening Timeline
The restaurant is in plan review with final inspections to follow. Trinh is targeting a late-November opening; a specific date is to be announced, he told Business Debut.
