NASSAU COUNTY, FL — Viet Noms, a new Asian street food trailer owned by Liberty Phan, is preparing to service events and private catering across the state beginning in January 2026. Phan told Business Debut she hopes to complete one more small event by the end of 2025 before officially launching for the new year.

What to Expect

The trailer will operate at fairs, community events, markets, and private functions statewide. Phan said the concept draws inspiration from the night markets and street food culture of Vietnam, blended with the accessibility and high-energy atmosphere of American fair food.

“My goal is to bring Asian street food to smaller events and markets where you can’t usually get different types of Asian dishes in one place,” Phan told Business Debut. Viet Noms will offer items representing Vietnamese, Korean, Chinese, and Japanese street food traditions.

The menu centers on handmade dishes rooted in Phan’s family cooking. Among the most popular items are Korean beef short ribs marinated for 12 to 24 hours and served over fried or steamed rice, with homemade pickled radish, carrots, and cucumbers. “That’s probably my favorite thing. It’s also one of our best sellers,” she said.

Other offerings include teriyaki chicken skewers, egg rolls, banh mi, musubi, onigiri, and beetle leaf rolls; a traditional Vietnamese street food made with seasoned ground beef wrapped in betel leaves and grilled.

Phan credits her parents, who have owned multiple restaurants and formerly operated an Asian grocery store with a full kitchen, for the recipes and culinary foundation. “I wanted to really share my father’s cooking with people who’ve never had it before,” she said.

Ownership

Viet Noms is owned by Liberty Phan. She noted the business is supported by her husband, Reed Allen Jr., as well as her parents, in-laws, and siblings, who assist with operations and childcare. “Without our village we couldn’t have done it,” she told Business Debut.

Opening Timeline

Viet Noms plans to be fully operational in January 2026. Phan intends to participate in one additional small event in late 2025 prior to the official launch.

Hours

Service will primarily take place on weekends, with weekday availability depending on event scheduling.
