KNIGHTDALE, NC — Unhinged Coffee & Co., a growing local concept from Jonny Mocha and Cody Alexander Vaughn, is preparing to open its first brick-and-mortar location at 319 N First Ave, Knightdale, NC 27545. The business will introduce a day-to-night coffee shop model that transitions from morning café service into an evening social space.
The team is targeting a soft opening this week, followed by a grand opening in early May as final details are completed.
What to Expect
Unhinged Coffee & Co. began as a mobile coffee cart, operating at corporate events, markets, and pop-ups across the Triangle. The new Knightdale space marks the brand’s first permanent location and will serve as its flagship, Mocha said.
The concept is centered around creating a “third space” environment — a place outside of home and work where guests can gather, relax, and connect. “Our mission is rooted in trying to create a third space that’s safe for everyone and inclusive,” Mocha told Business Debut.
Additionally, he shared that core components of the brand are inclusivity and mental health awareness.
Menu
The menu will focus on espresso-based drinks, coffee, and baked goods, with plans to expand into small plates over time. Guests can expect traditional café offerings alongside flexibility in customization, including decaf options available throughout the day and evening.
In addition to coffee, the concept will evolve into a hybrid café environment, offering beer, wine, and THC beverages alongside its standard menu as part of its extended evening experience.
Ownership Background
Jonny Mocha and Cody Alexander Vaughn launched Unhinged Coffee & Co. less than a year ago, quickly expanding from a single cart to multiple mobile setups and now a physical storefront.
The team is also developing a coffee trailer, expected to launch in the coming weeks, with plans to establish a semi-permanent presence in a more central Raleigh location.
Opening Timeline
The Knightdale location is in the final stages of renovation, with a soft opening planned for this week. The team is targeting a grand opening in the first week of May.
Hours
During its soft opening phase, Unhinged Coffee & Co. will operate seven days a week from 6:30 a.m. – 3:30 p.m. Following the grand opening, the shop will transition into a full day-to-night model, expanding hours to 6:30 a.m. – 9 p.m., and until 10 p.m. on Fridays and Saturdays.
