Two New Food Concepts Opening Inside Crooked Can Brewery in Snellville
Pizzeria Fiamma is now open in Snellville with MackinMikes Mac & Cheeze Bar set to follow in two weeks.
SNELLVILLE, GA — Pizzeria Fiamma and MackinMikes Mac & Cheeze Bar are opening inside Crooked Can Brewery at 2265 Wisteria Drive SW, Snellville, GA 30078, owners Michael Tarrant and Gregg Fiametta told Business Debut. Pizzeria Fiamma opened April 11, and MackinMikes Mac & Cheeze Bar is expected to open in about two weeks, they shared with Business Debut.
What to Expect
The concepts operate as neighboring counter-service spaces inside the 12,000-square-foot brewery, Tarrant told Business Debut. Guests can order from either concept and sit in Crooked Can’s shared seating area, which includes more than 300 seats with capacity expanding to around 500 including the outdoor patio, he said.
Menu and Vision
Pizzeria Fiamma focuses on pizza made with imported Italian ingredients, including meats, tomatoes, oregano and Caputo flour, Fiametta told Business Debut. The concept draws from his Italian roots, with the name Fiamma meaning “little flame,” a nod to both his last name and the cooking style.
“Fiamma stands by the quality,” Fiametta told Business Debut. “I’m all about quality over quantity.”
MackinMikes Mac & Cheeze Bar centers on a five-cheese blend of sharp cheddar, Gruyere, Gouda, mozzarella and Parmesan, Tarrant told Business Debut. The menu will feature specialty options like chicken tender mac, braised short rib mac and pulled pork mac, alongside a build-your-own format.
The concept also includes sides like fries and sweet potato fries, plus desserts such as Japanese canned cake, Tarrant told Business Debut.
Background
Fiametta brings decades of experience in the restaurant industry, starting at a young age in family-owned pizzerias in New York before continuing his career in Florida, he told Business Debut. He previously worked as a chef at Anthony’s Runway 84 and later spent time with Anthony’s Coal Fired Pizza, where he met Tarrant.
Tarrant also has an extensive background in restaurant operations, with experience at brands including Nathan’s Famous Hot Dogs, Chili’s and Outback Steakhouse, where he spent more than a decade developing his management style, he told Business Debut.
The two partnered to combine Fiametta’s culinary background with Tarrant’s operational experience.
Hours
Both concepts plan to operate from 11 a.m. to 9 p.m. Sunday through Thursday and 11 a.m. to 10 p.m. Friday and Saturday.
