Thin Crust Pizza Spot Opening Soon in Brookhaven
Unkie’s Pizza + Bar will launch takeout first, then expand with a bar, patio, and full menu in Brookhaven.
BROOKHAVEN, GA — Unkie’s Pizza + Bar is preparing to open at 3400 Clairmont Rd, Suite A, Brookhaven, GA 30319, co-owner Richard Gazaway told Business Debut. Gazaway is opening the concept with business partner Michael Colombo. Business Debut saw the news first from ToNeTo Atlanta.
What to Expect
Unkie’s will open in two phases, Gazaway said. Phase one is expected to begin with takeout service only. The team plans to operate in a pop-up style with a limited number of pizzas available each day to start. The menu will be limited to pizza and salads during this initial period.
Phase two will serve as a grand opening with the debut of their indoor/outdoor bar, and around 60 seats between the dining room and patio. The menu will expand to include appetizers and sandwiches as well. The pizza will be a thin, crispy style, with dough recipes he's been developing for months.
Opening Timeline
Gazaway said the restaurant recently completed its food service inspection and received its food service permit. He said the team is expecting final city items such as the certificate of occupancy and business license to be completed soon, with takeout service targeted to start within about two weeks.
Phase one will run for about a month before beginning a small renovation to build out the bar and patio once the liquor license is secured.
Hours
Gazaway said the team is targeting lunch and dinner service and expects to be closed Mondays at the start. He said the long-term plan is to move toward seven days a week.
