The Wafflery Opening in West Charlotte on Dec. 13th

The growing brunch brand has immediate plans for another Charlotte-area location.

CHARLOTTE, NC — The Wafflery, led by owner Matt King, is hosting a grand opening in West Charlotte this weekend on Saturday, December 13th at 7 a.m. at: 2817 Rozzelles Ferry Rd, Charlotte, NC 28208.

The brunch-focused concept also plans to open another location at 5332 Prosperity Church Rd, Charlotte, NC 28269, King told Business Debut. The Prosperity Church Road location is targeting a February opening.

What to Expect

The brand currently has two locations, one in Charlotte on 10th Street, and the other in Boone. These two additions will bring their total count to four. King shared that once at four locations, they will step back and continue to refine the business model in preparation for more growth.

The Rozzelles Ferry Road restaurant is located in a second-generation space of about 2,000 square feet. King said the dining room will seat roughly 80 guests and is positioned to serve a growing residential area that has had limited nearby restaurant options.

At Prosperity Church Road, The Wafflery is taking over a former Jamaican restaurant in a center that also includes a movie theater.

The Wafflery's concept is built around waffles, biscuits and grits. The menu is organized into a large build-your-own section, where guests choose a base (waffle, biscuit or grits), select a protein, and add toppings and sauces. For guests who prefer set combinations, there is a signature section with six or seven dishes to choose from.

Signature offerings include chicken and waffles, red velvet waffles, chicken with peaches and cream, shrimp and grits, crabcakes and grits, and biscuit builds such as hot chicken, sausage and gravy, and pot roast. Traditional breakfast plates are also available.

King said the concept grew out of gaps at his former restaurant Maddie’s Diner, where equipment and space limitations prevented him from serving waffles and biscuits.

Opening Timeline

The Rozzelles Ferry Road location will officially open Saturday, December 13, at 7 a.m. The Prosperity Church Road location is targeting an opening in February.
