The Thirsty Dragon, a European tavern-inspired restaurant, is planning to open mid-January in Lake Wales, co-owner Robert Connors shared with Business Debut. Connors, alongside his wife Susan and other investors, is bringing this concept to 126 N 1st St, Lake Wales, FL 33853. Connors was inspired by the city’s ambitious urban renewal plan, Lake Wales Connected. The $40M downtown renovation project, designed by Dover, Kohl & Partners, aims to revitalize the area and provide new opportunities for growth.

The Thirsty Dragon’s design channels the charm of a 19th-century European tavern, featuring elements like a fireplace and a grandfather clock to create an upscale and cozy ambiance. The restaurant will seat 50 guests indoors and include an expansive outdoor patio, complete with a stage for live performances. With plans to offer table service, the menu will feature a creative mix of dishes, from classics like pub-style fare to more creative options that are being decided on now.

In addition to its food, The Thirsty Dragon will serve a wide variety of draft beers and offer a retail wine section. Drawing on their experience from owning Bellissimo Art Gallery with its attached wine shop and bar, the Connors plan to curate a selection of unique wines.
