The Rib Shack to Return to Its Roots with Food Truck in Albany
The Rib Shack is bringing its smoked meats and homemade sides back to Albany with a new food truck.

ALBANY, GA — The Rib Shack, known for its smoked meats and homemade sides, is returning to the road. Owner Rich Blanchard told Business Debut the food truck will be stationed primarily at 3213 Gillionville Rd., Albany, GA 31721 and is expected to open next week.
What to Expect
The Rib Shack’s menu will feature family barbecue recipes passed down from Blanchard’s grandfather and uncle. Guests can expect smoked ribs, brisket, chicken, and a lineup of homemade sides, all prepared from scratch. “We don’t buy pre-made sauces or rubs—we make everything ourselves,” Blanchard told Business Debut.
The truck will also serve customer favorites that go beyond traditional barbecue, including a Cuban sandwich inspired by Blanchard’s South Florida upbringing and a brisket grilled cheese that has been a crowd favorite at the Albany Exchange Club Fair for three years.
Menu and Vision
Blanchard said the move from brick-and-mortar back to a mobile setup offers more flexibility and visibility. “As the economy changed, we wanted to reach more people and bring our food directly to them,” he said. He operates the business with partner Matt Whiting, an Albany native with 15 years of local restaurant experience.
The food truck will operate as takeout only, without seating, in compliance with local regulations. Blanchard also plans to rotate to local businesses and events, including stops at the Marine Corps Logistics Base and the Molson Coors brewery.

Hours
The truck will be open Tuesday through Sunday for lunch and dinner, closed on Mondays. Hours may vary depending on demand and local events.
