The Greyson is targeting a second-week-of-March opening for its new Apollo Beach restaurant and bar.
APOLLO BEACH, FL — The Greyson, a semi-upscale-casual sports restaurant and bar, is expanding with a new location planned for 6192 Paseo Al Mar Blvd., Apollo Beach, FL 33572.
Co-owner Russell Matthes told Business Debut the team is targeting the second week of March, with the timeline dependent on the contractor schedule. Matthes co-owns the concept with Tom Halkidis. They have locations open in Palmetto and Lakewood Ranch.

What to Expect
The Apollo Beach restaurant is a roughly 3,500-square-foot buildout with about 160 seats inside and out, Matthes said. The patio is expected to be about 600 square feet.
Matthes said the layout will be similar to the brand’s Palmetto location, with a bar area on the left when guests walk in and a dining room that is slightly larger than the earlier build.
Menu and Vision
The Greyson is positioned as a family-friendly sports bar built around food, drinks, and game-day viewing. The company describes the concept as a contemporary industrial space with a high-end audio and video setup and indoor and outdoor dining. Matthes said the group aims to keep locations consistent.
While menus are intended to match across stores, he said the team may add select local beers depending on what is popular in each market.
Opening Timeline
Matthes told Business Debut the Apollo Beach location is on track for the second week of March, with an estimated window of about six to eight weeks at the latest.
Continued Growth
Matthes told Business Debut the group is also planning a Pasco County location in Wesley Chapel. The plan calls for an indoor-outdoor bar setup. He said the team is targeting a late 2026 opening if the development and buildout stay on track.
