TAMPA, FL - Cyber Nachos, a new food truck from owner Jesse Dickinson, is preparing to roll out across the Tampa Bay Area around Jan. 15, pending final permits and inspection, Dickinson told Business Debut.

The truck will primarily serve Hillsborough County and Tampa, with plans to book stops and events across surrounding counties including Pinellas, Pasco and Polk.

What to Expect

Dickinson’s goal is simple: take a food people already love and make it feel a little new. Cyber Nachos will focus on a set menu of “specially crafted” nachos with tech-inspired names, built to move fast at festivals, food truck rallies, office stops and catering events.

Because the truck is fully mobile, Dickinson said he is not tied to one location and plans to go where the demand is.

The core of Cyber Nachos is a “stacked nacho” approach. Instead of loading a pile of chips and leaving customers with an empty bowl of plain chips at the bottom, Dickinson said he builds the nachos so toppings are layered throughout, creating what he described as a better “nacho experience.”

Crunch is part of the plan, too. Dickinson said he prefers melted shredded cheese over queso on the nachos, because queso can make chips soggy. Queso will still be available, but as an option rather than the default build.

A signature menu item is the “Trojan Upload,” Dickinson told Business Debut. It’s a gyro-inspired nacho made with pita chips topped with gyro meat, feta, diced tomatoes, red onion and tzatziki sauce.

He also plans to serve traditional options like seasoned ground beef nachos, plus fresh pico and fresh jalapeños. Proteins will generally come down to one main question at the window: ground beef or grilled chicken, Dickinson said.

To branch out beyond tortilla chips, the truck will also offer “Cyber Spuds,” Dickinson’s take on Irish nachos. The dish starts with waffle fries and layers in seasoned ground beef, melted cheese and traditional toppings like lettuce, pico, jalapenos and sour cream.

Sauces are another way the truck will let customers customize after the build, with options such as jalapeno ranch and habanero sour cream, Dickinson said.

Opening Timeline

Cyber Nachos is targeting a rollout around Jan. 15, pending final permits and inspection, Dickinson told Business Debut.

Hours

Dickinson said he plans to run Cyber Nachos as a full-time business and be available seven days a week, depending on event bookings and scheduling.
