INDIALANTIC, FL — Stokd Kitchen, a new food truck from owner Tony Cootz, is preparing to be parked at 2301 N. Highway A1A, Indialantic, FL 32903 on November 1st. Cootz told Business Debut the truck will be primarily stationed at Paradise Beach Park, serving beach-friendly meals in a family-focused setting.

What to Expect

Cootz and his wife are introducing a community-centered concept built around smoked meats, tacos, and smash burgers—all designed for easy, handheld eating by the ocean. Stokd Kitchen will also serve breakfast burritos and affordable coffee, with possible collaborations in the works with local vendors such as Donut Baron for morning treats.

The menu emphasizes simplicity and value, with most breakfast items priced at $5 or less and lunches around $10. “I want families to be able to come out to the beach and enjoy a meal without spending $200,” Cootz told Business Debut. “We’re keeping portions fair and prices affordable so everyone can enjoy good food.”

Drawing from his background in restaurant management and food and beverage operations in Park City, Utah, Cootz plans to bring that same hospitality and consistency to the Space Coast. “I’ve always believed in keeping it simple and making it affordable for the people around you,” he said.

The truck will feature smoked brisket, tacos, and sandwiches with a focus on low waste and environmentally conscious practices. Cootz said he’s working with Brevard County’s park district to keep the area clean and plans to use recyclable packaging. His wife, Alicia, contributes as both business partner and baker, preparing desserts such as cinnamon rolls and pastries.

Community and Space

Located at a family-friendly park with lifeguards, volleyball courts, and shaded areas, Stokd Kitchen will make use of existing picnic tables and plans to add more seating, including a small play area for children. Cootz also hopes to host and participate in local events, bringing new community gatherings to the Beachside area.

Opening Timeline

The team is targeting a public opening on November 1st, with a potential soft opening beforehand.

Hours

Stokd Kitchen will be open Wednesday through Sunday 8 a.m. – 5 p.m and closed Mondays and Tuesdays.
