Spurs Chophouse and Saloon Bringing Williston a New Dining and Nightlife Venue
The business will open in two phases, a restaurant and dining room first, then a saloon and an outdoor area with dancing.

The origin of Spurs rises from owners Don Kreischer and Tiara Pfeifer’s appreciation for steakhouses and the steakhouse dining experience, Kreischer told Business Debut in an interview. Formerly the owner of a billiards hall and restaurant in Ocala, Kreischer decided to purchase a cluster of properties in Williston and open Spurs to the area, emphasizing a farm-to-table steak dining experience.
Coming to: 36 E Noble Ave, Williston, FL 32696, the total space at the property totals 11,000 square feet. They will open in two stages. Stage one will include the dining room and kitchen—roughly half of the space—and stage two will be their sister concept, Giddy Up Saloon, with an outdoor seating and dancing area for line dances and other events.
The first stage will include a dining area with 165 seats. The seating arrangements will range from tables for two to private areas that can be used for larger events or for local sports teams to celebrate victories.

The second stage will be Giddy Up Saloon, which will include a bar that feeds into the outdoor area with seating and a designated dancing space.
The menu, Kreischer shared, will feature a range of meats and specials, from affordable dishes in the $10 range to $100+ tomahawk steaks.

Kreischer noted that he has visited local farms and ranches to establish relationships with potential suppliers and collect memorabilia for the restaurant’s décor, including old spurs, wagon wheels, saddles, and more.
The intent is to source as much beef as possible from local ranchers.
The eatery is hoping to open in a matter of months, Kreischer said. They are currently waiting on results regarding the necessary updates for their aged building before beginning construction. Staff, chefs, and a construction company are already lined up to begin work once permits are approved.
