Solo Taco Planned for Revolution Mill with Focused Taco Menu

The Cugino Forno team is branching into tacos.

GREENSBORO, NC — A new taco concept called Solo Taco is planned for the Revolution Mill mixed-use development in Greensboro. Partner Idris Aksoy told Business Debut the restaurant will open within the same complex as Cugino Forno at 1160 Revolution Mill Dr, Greensboro, NC 27405, though the exact address for Solo Taco within the development is still to be announced.

Aksoy operates the concept with partners Yilmaz Guver and Joseph Ozbey. The trio are also behind the Cugino Forno brand, which has expanded to multiple locations across North Carolina.

What to Expect

Solo Taco will operate as a fast casual restaurant where guests order at the counter and dine at their own pace. Aksoy said the team prefers the format because it allows customers to enjoy their meal without feeling rushed.

“We love the fast casual style,” Aksoy told Business Debut. “We want people to feel at home, come in, sit, and enjoy their time without feeling pressure.”

The restaurant will focus on tacos as the primary menu item, with a streamlined selection designed around high-quality ingredients.

The concept will feature a limited menu built around tacos only, without additional items such as quesadillas or other traditional Mexican restaurant offerings.

Aksoy said the goal is to keep the menu simple while focusing on execution and ingredient quality.

“It will be strictly taco,” he told Business Debut. “Not many options, but the best options.”

The tacos will incorporate a blend of Mexican inspiration with influences from European-style meat preparation, including large vertical rotisserie-style cooking equipment similar to gyro machines.

The beverage menu will include margaritas, beer, wine, soda, and traditional Mexican soft drinks.

To help develop the concept, the partners are bringing in an experienced chef from Chicago known for working extensively in Mexican cuisine.

Opening Timeline

An opening timeframe has not yet been announced as the team finalizes the space within Revolution Mill.

If the Greensboro location performs well, the partners said the Solo Taco concept could expand to other markets alongside their existing restaurant portfolio.
