Smoke and Maple Restaurant Bringing Gastropub Concept to Palm Beach Gardens
PALM BEACH GARDENS, FL — Smoke and Maple Restaurant is targeting a late June opening at 12325 Northlake Blvd., Suite 130, Palm Beach Gardens, FL 33412, owner Nick Lanier told Business Debut. The concept is led by Lanier alongside co-owners Tara Lanier, Brendon O’hara, and Joel Hartunian.
What to Expect
Smoke and Maple will operate as a full-service gastropub with an upscale casual approach. Guests can expect a flexible dining experience, from quick happy hour visits to full meals with craft cocktails, wine, and local beer, Lanier told Business Debut.
The restaurant is designed to serve a wide range of guests. “If you want to come in and spend 20 bucks at happy hour and get out, fine. If you want to come in and eat oysters, pop champagne and have a tomahawk and spend 300, fine,” Lanier told Business Debut.
The space will include approximately 167 seats, including a 22-seat bar.
Menu and Vision
The menu is described as “rustic refined,” blending comfort food from various cultures with elevated execution. “Think about your grandma’s cooking just better,” Lanier told Business Debut.
Early menu highlights include a smash burger, rotating oysters, raw bar offerings, and a signature “Kentucky barbecue fried gator” dish developed by executive chef David Schroeder, Lanier told Business Debut.
The team is also emphasizing ingredient quality and cooking methods. “We’re not using any seed oils whatsoever… we’re using beef tallow, avocado oil, healthy… we’re not using any trash,” Lanier told Business Debut.
The concept blends influences from the surrounding golf communities and the nearby Everglades, creating what Lanier describes as an “old Florida country style restaurant” within Palm Beach Gardens, Lanier told Business Debut.
Smoke and Maple is also rooted in local ownership and community ties, particularly as new development continues in the area. Lanier acknowledged that some nearby residents are cautious about growth, telling Business Debut, “We’re locals. I’m from here. I’m born and raised in Palm Beach Gardens… Palm Beach County has been really good to us and we’re at a position now where we’re trying to share that with others… give back to the community.” He added, “We’re not coming in here taking anything. We’re from here and we want to share it with our local families.”
Opening Timeline
The team is planning a job fair in May, followed by training and a soft opening in June. Lanier said they are targeting the last week of June for an official opening, told Business Debut.
Hours
Initial operations will begin with dinner service only before expanding. Planned hours are 11:30 a.m. to 10 p.m. Sunday through Thursday and 11:30 a.m. to 11 p.m. on Friday and Saturday, Lanier told Business Debut.
