Salty Bone BBQ Food Truck Rolling into Daytona Beach
Smoked ribs, chili, and fresh sides crafted with a Florida twist define the menu at Salty Bone BBQ.
DAYTONA BEACH, FL – A new food truck will travel soon in Volusia County, as Salty Bone BBQ prepares to bring award-winning barbecue with a Florida twist to local events. The business, led by Jesse Hearn and his wife Kayla, will serve Daytona Beach area, at festivals, gatherings, and private catering functions. Their commissary kitchen is located at 1220 Hand Ave, Ormond Beach, FL 32174. Hearn told Business Debut that Salty Bone BBQ is currently finalizing its license and expects to open within the next month.
A Fresh Take on Barbecue
The menu promises a mix of Texas- and Carolina-style barbecue with a distinctive Florida flair. Guests can expect vibrant, fresh flavors across smoked meats, ribs, and sides. Their ribs, in particular, carry local bragging rights. Hearn shared that they’ve taken home awards from competitions in DeLand, including second place overall and first place in chili with nothing more than a simple backyard grill.
“Our ribs are kind of our own style, a mix of Texas-Carolina, and we add our own little flavor to it,” Hearn said. “We just want to bring fresh, vibrant, craft barbecue to Volusia County, something that is lacking in the Volusia County area.”

A Family Endeavor
The Salty Bone BBQ is not simply a food truck but a family endeavor. Jesse and Kayla, a firefighter duo, wanted to create something that would allow them to spend more time at home while still fulfilling their passion for barbecue after having their first child. Behind the venture is Kayla, a chef, who curated everything, from recipe development to the logo and even the website.
“She encouraged me to take the step forward and start it all,” Hearn said while noting that it was a true collaboration between them.
The Salty Bone BBQ brand captures the essence of the couple’s coastal roots and their adventurous taste: the salt from the seas, the cling of the smoke on the meat, and the dedication to creating exceptional barbecue.
Opening Hours
The concept runs as a food truck, so there will be no set shop hours. Instead, the truck will normally service weekend events from 11 a.m. – 6 p.m., depending on the schedule.
