Roots Southern BBQ Coming Soon to Ruskin and Apollo Beach
Josh Ricard is launching his new mobile kitchen, featuring authentic South Carolina pit-style BBQ with house-made sauces, on August 22nd.
Roots Southern BBQ, a new mobile kitchen concept, will launch in Ruskin on Thursday, August 22nd, owner Josh Ricard told Business Debut. Ricard will run the business alongside his wife, Melanie Davis, and her daughter, Kate Morrison. Roots Southern BBQ will operate in the Ruskin and Apollo Beach areas.
Ricard's passion for BBQ stems from his childhood experiences with whole hog barbecues in South Carolina. After moving to Florida, he continued the tradition, cooking for family and friends before deciding to turn his hobby into a business. Operating out of his 28-foot trailer, Ricard will serve authentic South Carolina pit-style BBQ, featuring ribs, chicken and pork.
The menu will showcase BBQ with a variety of house-made sauces. Ricard offers three signature sauces: a Carolina mustard-based sauce, a Carolina vinegar sauce and a sweet sauce similar to Sweet Baby Ray's. He's also recently introduced a jalapeño sauce to the lineup.
Looking ahead, Ricard mentioned plans for a Phase 2 expansion involving a farm-to-table style concept, though details are still in development.
